My husband and I visited my aunt a few years ago. She always has the best recipes to feed her big family of six people. On this particular day she made a chicken and broccoli bake. My husband absolutely loved this dish and asked me numerous times to make it for him. One weeknight I had chicken breasts and an uncooked broccoli head in the fridge and I decided to try and recreate this dish. You will see that once again, I used my favourite ingredient of all times - plain yogurt!
Ingredients:
1 tablespoon olive oil
400g chicken breasts cut into strips or cubes
One broccoli head broken into smaller pieces
200g full fat plain yogurt
4 tablespoons mayonnaise
½ cup grated cheese
Salt and pepper to taste
Chicken spice (optional)
Method:
Preheat the oven to 180°C.
Season the chicken with chicken spice or spice of choice. Heat the olive oil in a pan, add and cook the seasoned chicken.
Steam the broccoli for 5-8 minutes on the stove or in the microwave.
Add the steamed broccoli and cooked chicken into an ovenproof dish.
In a bowl, mix the yogurt, mayonnaise, salt and pepper.
Add the yogurt mixture to the chicken and broccoli and add the grated cheese on top.
Bake the dish for 15-20 minutes.
Tip: This dish can be served with rice, pasta or a side salad.
