Creating your own Sourdough Starter

I cannot even recall how many times I have started a new sourdough starter only to fail or to lose interest! Yet, I refused to get starter from someone else. 😆 If I was about to do this entire sourdough thing, I was about to do it all from scratch!
After a few (many) failed attempts, I am by no means a pro. But I've figured out a few things in the process!

To me personally, getting an active sourdough starter has been more challenging than baking the actual sourdough! So I'm here to guide you that you don't have to struggle the way I did!
What do you need:
Glass Jar with a lid
White Bread Wheat Flour (you can use other flour as well, but white bread flour is considered as the easiest one for beginners - I like to use Eureka White Bread Flour)
Water (filtered, room temperature)
Spatula
Kitchen Scale

Creating your starter:
Day 1: Add 50g flour + 50g water to your glass jar and mix properly. Put on the lid but don't seal it completely, some air should be able to come in.
Day 2: allow the starter to activate, don't feed it
Day 3-7: Discard half of starter + add 50g flour + 45g water and blend well with spatula
Day 8: Do FLOAT tester to see if your starter is active and ready to bake with - scoop a small bit of starter (just the tip of a teaspoon) into a cup of water. If it floats it's ready to use. If it sinks to the bottom, continue to feed your starter for 2-3 more days and try the floater test again.
Important:
*feed starter at the same time every day.
*do not throw your starter down the drain, it becomes like cement.
*you want to do your floater test when your starter is at it's peak (aka before it becomes hungry again).
