This high protein cheese cheesecake can be enjoyed as a dessert, a breakfast or as a midday snack. It is packed with protein, so easy to make and way more healthy than it tastes!
Ingredients:
250g low fat cottage cheese (smooth)
1/4 cup plain yogurt
1 egg
2 tablespoons sugar (or sweetener of choice)
1/2 cup blueberries
Method:
Preheat the oven to 180°C.
Combine the cottage cheese, yogurt, egg and sugar in a mixing bowl.
Divide the mixture into two ramekins and cover both ramekins with blueberries. (Blueberries can also be mixed into the mixture before pouring it into the ramekins.)
Bake the cheesecakes for 30-35 minutes until cooked in the middle.
Allow the cheesecakes to cool down before enjoying.
Side note: The blueberries can easily be switched out with raspberries or strawberries.
