Sweet potato fritters

Sweet potato is probably one of the most filling vegetables for me. On top of that, it is so versatile, perfect for both sweet or savory dishes. This recipe hits the spot when it comes to sweetness and is perfect as a side dish, or as a healthy snack, it can even be served with ice-cream and be eaten as a dessert.



Ingredients: 

For the fritters:


  • 1 medium sweet potato

  • 2 large eggs

  • 2 tablespoons flour of choice

  • teaspoon of cinnamon 

  • Pinch of salt 

  • Oil for frying 


For the sauce:


  • 1 ½ tablespoons butter

  • 1 ½ tablespoons sugar

  • 1 tablespoon nut butter of choice (optional) 





Method:


  1. Cut the sweet potato into smaller pieces and cook in water on the stove until soft (approximately 20 minutes). 

  2. Once the sweet potato is cooked and cooled down, place it in a blender along with the eggs, flour, cinnamon and salt. 

  3. Blend until smooth. 

  4. Spoon the mixture into a hot pan and fry until golden brown. (If the mixture is too soft making the fritters too difficult to flip over, add more flour.)

  5. To make the sauce, place the sugar and butter into a microwave safe bowl and microwave on high for 2-2 ½ minutes. Mixing every 30 seconds. 

  6. Once the sugar is dissolved and the sauce is thickened, add the nut butter and mix well. 

  7. Pour the sauce over the fritters and enjoy! 


This recipe makes 12-15 fritters.
