Zucchini Brownies

If you're a mom and you struggle to get some veggies into your kids, this is a great idea! Or if you are a person, who doesn't like the idea of something green, you won't even know it is in here!


For this delicious recipe, I used a mixture of oat flour and cake wheat flour. You can substitute them for alternative flowers, but these were pretty great just as is!


Ingredients:

SERVES 8


2 tsp Nomu Skinny Hot Chocolate/Coacoa powder

1 tsp baking powder

10 sweetener drops/8 sachets of sweetener (+- 50g alternative sweetener)

1.5 cups oat flour (blended oats)

0.5 cups cake wheat flour

250g zucchini/baby marrow puree

2 eggs

5 tsp plain yogurt

chocolate chips


Instructions:

  1. In a mixing bowl, combine all the dry ingredients.

  2. Spray your brownie pan and preheat the oven to 180 degrees Celsius.

  3. In your blender combine the eggs, plain yogurt and zucchini.

  4. Add the blended wet mixture to the dry mixture and mix.

  5. Add the chocolate chips and transfer to your baking sheet.

  6. Bake them for +- 15mins until thoroughly baked.

  7. Add toppings and enjoy!
